Pumpkin Meatballs with a Pumpkin-Spiced Sauce


Note: If you are making the sauce in advance then you may want to add more milk as it becomes thicker as it sits.

I used my Bialetti Aeternum Signature Series pan to make my pumpkin spice sauce.


For Pumpkin Meatballs

  • 1 Pound ground turkey
  • 1/3 Cup tapioca flour or almond flour
  • 1 Teaspoon cinnamon
  • 1/4 Teaspoon fresh nutmeg, grated
  • 1/2 Teaspoon freshly ground pepper
  • 1 Teaspoon sea salt
  • 1/2 Cup pure pumpkin

For the Pumpkin-Spiced Sauce

  • 1 Cup pure pumpkin
  • 1 1/2 Tablespoon honey
  • 1 Tablespoon cinnamon
  • 1 Teaspoon sea salt
  • 1 Tablespoon coconut flour
  • 1 Teaspoon cinnamon
  • 1/4 Teaspoon fresh nutmeg, grated
  • 1/2 Teaspoon pumpkin pie spice
  • 1 Cup coconut milk or cream

Portions: 3 meatballs w/ 3 tbsp pumpkin sauce for women/ 6 meatballs w/ 6 tbsp pumpkin sauce for men.

Autumn is filled with pumpkins & turkeys, so we decided to go with the flow and create these tasty turkey meatballs & savory pumpkin sauce! It’s perfect for dinner, (Meal 4 on the Remedy Recipes format,) over a cup of shredded zucchini and accompanied by a side salad. We’ve been enjoying this creation every week, and still find ourselves craving to make a new batch every couple of days.

Pumpkin Barbecue Meatballs

I remember my grandmother’s southern style dishes. Talk about the ultimate comfort food! One of the the dishes I would look forward to her making was meatloaf and mashed potatoes. When I got married it was one of the meals I’d make for my husband and I. These meatballs are a spin off of that classic meatloaf recipe, with juicy bites of ground turkey (or beef) smothered in a delicious homemade barbecue sauce.

My favorite part of that meatloaf is the sweet and tangy glaze on top. It’s a simple glaze made with ketchup, brown sugar, and mustard. I wanted to incorporate that same tangy flavor into the sauce for these meatballs. I took a few of those ingredients and made a scrumptious homemade pumpkin barbecue sauce, which I’ve even used on baked chicken! The pumpkin is such a nice addition to the barbecue sauce and perfect for this time of year. The flavor is not overwhelming (just a nice hint) and you’re able to benefit from the extra fiber and nutrients the puree contains. It’s a win all the way around, I’d say!

The great thing about these meatballs is that every bite is full of this delicious barbecue sauce. It’s a super simple sauce and takes less than 10 minutes to whip up.

Begin by sautéing the onions and garlic in a small saucepan. After a few minutes, when the onions begin to turn translucent, add in your other ingredients and cook until thoroughly heated. That’s it! I’m telling you, friends, the hardest part of this recipe is waiting for the meatballs to come out of the oven. The smell of them baking is so delicious, it’ll make a hungry tummy rumble! Well, at least that’s what mine does!

After you blend the meatball ingredients together, roll them into 1″ balls and place them on a lightly greased baking sheet. I got 28 meatballs the way that I rolled them. That number may vary depending on the size you roll them. You may also need to adjust the baking time if you roll them smaller or larger than I did. Place the pan in the middle rack of your oven and broil the meatballs for 10 minutes.

After 10 minutes on broil, remove the meatballs from the oven and transfer them to a smaller baking dish. This just ensures that the meatballs are able to get a good coating of barbecue sauce. We want them swimming in all that deliciousness! When you’ve transferred all of the meatballs over, pour the pumpkin barbecue sauce on top, coating each meatball thoroughly. Cover the dish loosely with foil and return to the oven to finish baking. Bake for an additional 15-20 minutes, or until the meatballs are cooked all the way through.

Serve these on a bed of mashed potatoes, with vegetables, or as an appetizer. However you choose to eat them, I hope you enjoy them as much as we do! Happy November, friends!

How Do You Make This Pasta Appetizer?

I started with a basic meatball recipe that uses a combination of beef and pork. My meatball &ldquorecipe&rdquo is really me asking the wife how to make a good meatball. Then I added in the basics &ndash an egg, breadcrumbs, parmesan cheese, salt and pepper. But instead of parsley I added fresh sage to go with the pumpkin sauce.

This recipe will get you about 18 golf ball sized meatballs which are going to fit perfectly inside your spaghetti cups.

I do think a good meatball needs to be pan fried to get nice and crispy on the outside &ndash so I did.

When the meatballs are done, wipe out the skillet and start the pumpkin sauce.

When the sauce is put together and simmering you can add the meatballs back to the pan and let cook until your spaghetti cups are ready.

Cook up some spaghetti and mix it together with some parmesan cheese, an egg and 1/4 cup of the pumpkin sauce. You&rsquore almost done now&hellip

Time to fill the muffin tins &ndash this is a lot easier than it looks, trust me.

I threw a handful of spaghetti in the muffin cup and then pushed it out of center towards the sides.

They&rsquoll pop out of your muffin tin pretty easily when they&rsquore done and then all that&rsquos left to do is put them together.

Spoon some pumpkin sauce in the center of the spaghetti cup and then put a big meatball on top.

The clean plate club won&rsquot be a problem when you serve these Spaghetti & Meatball Cups with Pumpkin Sauce &ndash so it&rsquos a good thing the recipe makes a lot!

How to Cook Spaghetti Squash

Can we talk about how easy spaghetti squash is to prepare? Yes, let's talk about it. But if you Google "how to cook spaghetti squash," you'll get about a million results, each telling you to do something slightly different.

With enough experimentation you'll find your favorite way, but here's the spaghetti squash roasting method that's always worked for me.

I like this method best because it doesn't require slicing the squash in half before roasting it, which is always so difficult for me to do. With this method, you roast the squash whole and cut it in half when it's tender.

Use a sharp knife to pierce the spaghetti squash all over and then simply bake the entire squash on a baking sheet at 375 degrees for 70 minutes, rotating the baking sheet after 35 minutes.

If it's tender enough to be pierced with a knife, remove it from the oven. Otherwise, roast it for another 10 minutes. Once it's tender, slice it in half lengthwise, discard the seeds and then scrape out all that delicious spaghetti squash flesh.

Once you have the spaghetti squash flesh out, you'll sauté it with butter, garlic, sage, and crumbled bacon. Just until it's nice and tender.

Pumpkin Tomato Basil Meatballs

The beginning of October calls for just about everything pumpkin, and yes, savory dishes too! Although pumpkin generally only makes an appearance a few months out of the year, I go at pumpkin in FULL FORCE to eat enough for the rest of the year. My favorite pumpkin dinner dishes include Pumpkin Chorizo Chicken Chili and Pumpkin Seed Pesto Butternut Squash Gnocchi. I’ve already been playing with a lot more this year. Like take for example, these meatballs. We kind of love meatballs in this house, especially my kids. Gussy them up with a delicious tomato sauce, some pumpkin, top with basil and it’s winning meal for me.

The pumpkin taste is pretty subtle, but just the right amount. I used an entire 15 oz can of pumpkin puree, but you can feel free to add even more. My meatballs were a blend of sausage and ground turkey, but once again, you can use your favorite ground meat. I baked the meatballs because they don’t quite fit in a large skillet. Ingredients For The Sauce:

3 cups chicken broth
1 (15 ounce) can pumpkin purée
28 ounce tomato or marinara sauce, homemade or canned
2 teaspoons dried basil
1 teaspoon dried garlic
1 teaspoon cinnamon
6 sage leaves
1 teaspoon salt
1/2 teaspoon pepper
1/4-1 teaspoon red pepper flakes, if desired

For The Pasta:
1 large spaghetti squash, (for a low fat alternative), if desired you can use pasta but the calorie count will go up.

Directions For The Meatballs:

1. In a large mixing bowl add the turkey, then just add all the other ingredients and stir until combined. Place a piece of Saran Wrap over bowl and place in the refrigerator for 30-60 minutes to make them easier to roll. You will get 20-22 meatballs.
2. After they come out of refrigerator roll meatballs and place on a cookie sheet, place a piece of parchment on cookie sheet first. Bake 15 minutes, turn meatballs and cook another 10-15 more minutes until browned
3. Place in the sauce and let the meatballs absorb all the sauce, keep in the sauce for about 30 min on simmer. Then add over your spaghetti squash pasta. Sprinkle with Parmesan cheese and enjoy

1. In a large stockpot add the sauce, broth, pumpkin, basil, garlic, cinnamon, sage, salt, pepper and red pepper flakes( if desired). Bring the sauce to a boil, then reduce the heat to low and simmer 20-25 minutes

Directions For The Spaghetti Squash:

1. To soften the squash because it is hard to cut through, place in the microwave for 4 minutes
2. Take it out the cut the ends off, and cut down the center, with a spoon take the guts and seeds out.
3. In a dish place 1/2- 2 inches of water on the bottom, then place the flesh side down into the dish and cook each half in the microwave for about 15 minutes or until the flesh is softer and ready, then with a fork scrape the squash until you get spaghetti strands, should look just like pasta. Sprinkle with some salt and pepper

In a large bowl or plate lay the spaghetti squash on the bottom, then add some meatballs and sauce, sprinkle with some Parmesan cheese and enjoy
